
Green beans and tomato sauce

Ingredients
4 Portions
2 lbs. Italian bush beans (Marconi)
14 oz. of diced tomatoes
3 tbsp. olive oil
3 tbsp. butter
1 onion (chopped)
3 sprigs of parsley (chopped)
Salt and pepper
Method
Remove ends of green beans and wash them.
It is important to keep them in cold water.
In a sauce pan, heat oil and butter together.
Add onion and cook until fully caramelized.
Add diced tomatoes and simmer for e few minutes.
Finally, add green beans and season whole mixture with salt and pepper.
Simmer the whole mixture with cover until the green beans are tender. About 20 minutes.
Sprinkle chopped parsley over sauce and serve with cavatelli.
