Chicken wings, drumsticks and sausages with vegetables
Ingredients
6 Portions
4 fennel sausages cut in two
6 chicken drumsticks
8 chicken wings (whole)
1 red onion, cut into chunks
½ butternut squash, cut into ½” slices
½ fennel, cut into ½” slices
10 small, whole, sweet peppers (red or orange)
2 sprigs of rosemary, chopped
10 sage leaves, chopped
50g of butter
7 tbsp. olive oil
4 oz. white wine
Bologna herbs sea salt
Pepperoncino oil (if desired)
Method
Preheat oven at 400°F.
Place chicken and sausages in an ovenproof dish. Add olive oil, butter and season with Bologna salt. Add rosemary, sage and mix well. Cook for 30 minutes.
Add wine and cook another 10 minutes.
Cut vegetables and put in bowl. Season with Bologna salt, add oil and mix well.
Add vegetable mix to the chicken and cook for 35 minutes at 375°F.
Set the oven on broil and cook for an additional 5 minutes.
If you wish, you may drizzle a bit of pepperoncino oil on top before serving.
